A bright Vietnamese noodle bowl with lemongrass grilled pork, cool herbs, crunchy cucumber, quick pickles, crushed peanuts, and a salty-sweet nước chấm dressing.

Ingredients

  • 1 lb pork shoulder, thinly sliced
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 stalks lemongrass, minced
  • 6 oz vermicelli rice noodles
  • 1 cup carrot and daikon, julienned
  • 1 cucumber, sliced thin
  • small bunch mint, cilantro, peanuts

Method

    Marinate the pork

    Toss sliced pork with lemongrass, fish sauce, brown sugar, garlic, and pepper. Let it sit while you prep the bowl toppings.

    Cook the noodles

    Soak or boil vermicelli according to the package, rinse under cool water, and drain well so the bowl stays springy.

    Make the pickles

    Toss carrot and daikon with rice vinegar, sugar, and salt. Stir fish sauce, lime, sugar, garlic, and water into a quick nước chấm.

    Grill and assemble

    Grill the pork until caramelized at the edges. Layer it over noodles with cucumber, herbs, pickles, peanuts, and a spoonful of nước chấm.
